spelt bread

in making spelt bread i have found that it rises alot. now, all the sites i went to said spelt won't rise as much. but they also said that you don't need to knead it as much because spelt is more water soluble than wheat. i think that my spelt bread rises more because i can't knead it less in my bread machine. more kneading=more fluffy bread. this excites me. today i am making cheese bread to bring to josh and allies. oh what fun.

we where just talking about how there was a huge fad in bread makers a few years ago, and now you can hardly find one. maybe thats why...

i think thats a good idea! fresh bread...no preservatives...you can make any kind! it's wonderful!
